In Japan they call it "onsen tamago", or hot spring egg due to its incredible consistency, it is cooked for 50 minutes at a temperature of 63°C. The ONSEN egg is served on a cream of black cabbage, courgettes and ginger together with breaded and fried shitake mushrooms and a carrot cream.

The star is hoshigaki, an ancient Japanese preparation: peeled ripe persimmons, hung and slowly air-dried for weeks or months, then massaged by hand until they develop a natural, intense sweetness and a soft, velvety texture.
